Four Ingredient Tomato Sauce – Marcella Hazan

Our youngest son is living in a campus appartment this year, and shares a kitchen with three other students. For the first time he is trying to cook. He is looking for simple meals, and can always buy a jar of prepared pasta sauce to throw on some pasta. But heat-and-serve is never as good as home made, so from time to time I send him a recipe that doesn’t require a lot of ingredients or prep time.  And this one is a winner – easy and delicious.

Ingredients(enough for 1 pound of pasta)

  • 28-ounce can of whole peeled tomatoes (fresh in season)
  • 1 onion, peeled and sliced in half
  • 1/2 stick of butter
  • Salt

Directions

Place the tomatoes, the butter, and the onion halves in a saucepan. Add a pinch or two of salt. Bring to a simmer over medium heat, and cook uncovered for about 45 minutes. Stir occasionally and break up any large pieces of tomato.

Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.
