Join us for an immersive exploration of syrups, tinctures, extracts, oleo saccharums, and other techniques used to capture, preserve, and enhance flavor in both the bar and the kitchen.
Through demonstrations, tastings, and practical examples, we’ll explore a variety of methods for extracting flavor from fruits, herbs, spices, and botanicals. Learn how different approaches—from traditional simmered syrups to sous vide infusions and concentrated extracts—can create dramatically different results. We’ll discuss how these ingredients can be used in cocktails, mocktails, sodas, teas, desserts, marinades, sauces, and other culinary creations.
