Grandma’s Olive-Stuffed Cheese Balls

This recipe is from a mimeographed copy that my mother-in-law gave us for her olive-stuffed cheese balls. They are simple to make. She used to make up a batch and freeze them so that she always had a quick appetizer on hand.

 

Ingredients

  • 2 C grated sharp cheddar cheese
  • 1 stick unsalted butter (softened)
  • 1 1/4 C all purpose flour
  • 1 tsp Tabasco sauce
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1 jar pimiento-stuffed green olives (drained)

 

Directions

Blend cheese and butter in a mixing bowl. Add the flour, Tabasco, paprika, and salt and form into a ball. Flatten out a walnut-sized amount of dough. Take a single olive and wrap it with the dough, rolling it into a ball.

Form as many balls as the dough will allow and place them on a parchment lined baking tray. Bake in a 350 degree oven for about 15 minutes. Serve warm.

Uncooked balls will freeze well.
