Ozark Pudding

This recipe is taken from Bess Truman, the wife of President Harry Truman. According to anecdotal records, this was the president’s favorite dessert. It is a marvelous way to use up any apples or nuts left over from the Holidays. Easy to make – you really must give this a try.

Serves 4*

Ingredients

  • 1 egg
  • ¾ Cup sugar
  • 2 Tablespoons all purpose flour
  • 1 ¼ Teaspoons baking powder
  • ¼ Teaspoon Salt
  • ½ Cup chopped walnuts or pecans
  • ½ Cup chopped peeled apples
  • 1 Teaspoon vanilla extract

Directions

In a mixing bowl, blend the egg and sugar together. Add the flour, baking powder, vanilla, and salt and mix to a smooth paste. Fold in the nuts and apples. Pour into a buttered pie tin or small casserole dish. Bake at 350 for 30 – 35 minutes.

Serve with a dollop of whipped cream.

*Recipe may be doubled for a 9 – inch pie dish.
